Hoe cakes

Hoe cakes are a simple Southern dish—crispy cornmeal pancakes traditionally cooked in a skillet. They date back to early American cooking and were often made by field workers using just a few basic ingredients.

Classic Hoe Cakes Recipe

Ingredients

  • 1 cup cornmeal
  • 1/2 tsp salt
  • 3/4 cup boiling water
  • 1 tbsp butter or oil (for frying)

Instructions

  1. In a bowl, mix the cornmeal and salt.
  2. Pour in the boiling water and stir until a thick batter forms. Let it sit for about 5 minutes.
  3. Heat butter or oil in a skillet over medium heat.
  4. Scoop about 2–3 tablespoons of batter into the pan and flatten slightly.
  5. Cook for about 2–3 minutes per side until golden and crispy.

How to serve

  • With butter and honey or maple syrup
  • Alongside fried chicken or greens
  • With a drizzle of molasses (a traditional Southern way)

Historically, hoe cakes were associated with the cooking traditions of the American South and appear in early records from the time of George Washington, who reportedly enjoyed them for breakfast.
