Here’s a tasty recipe for Italian Drunken Noodles, a fun fusion of Thai-style stir-fried noodles with Italian flavors like garlic, tomatoes, and Parmesan. 🍝🔥


🇮🇹 Italian Drunken Noodles

Ingredients (2–3 servings)

  • 200 g wide rice noodles (or fettuccine as a substitute)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup mushrooms, sliced
  • 200 g chicken, shrimp, or tofu, optional
  • 3 tbsp soy sauce
  • 2 tbsp white wine (optional – “drunken” flavor)
  • 1 tsp red chili flakes (adjust to taste)
  • ½ tsp black pepper
  • ¼ cup fresh basil, chopped
  • ¼ cup Parmesan cheese, grated

Instructions

1️⃣ Cook noodles

  • Cook noodles according to package instructions. Drain and set aside.

2️⃣ Prepare protein (if using)

  • Heat 1 tbsp olive oil in a pan, cook chicken/shrimp/tofu until done. Remove and set aside.

3️⃣ Sauté vegetables

  • Heat 1 tbsp olive oil. Add garlic and onions, sauté until fragrant.
  • Add bell peppers, mushrooms, and cherry tomatoes. Cook 3–4 minutes until tender.

4️⃣ Combine noodles and sauce

  • Return protein to the pan.
  • Add noodles, soy sauce, white wine, chili flakes, and black pepper. Toss to combine and heat through.

5️⃣ Finish with basil & Parmesan

  • Remove from heat. Stir in fresh basil.
  • Sprinkle with grated Parmesan before serving.

🍴 Serving Suggestions

  • Serve hot with a wedge of lemon or extra Parmesan.
  • Pair with a light salad or garlic bread for a full Italian-style meal.
