Mashed Delicata squash is a creamy, slightly sweet side dish similar to mashed potatoes but lighter and more nutritious. Delicata squash has a naturally buttery flavor, so it usually needs very few ingredients.

  • 1 large Delicata squash
  • 1–2 tablespoons butter or olive oil
  • 2–3 tablespoons milk or cream (optional, for extra creaminess)
  • Salt to taste

  1. Prepare the squash
    • Cut the squash in half lengthwise.
    • Remove the seeds.
  2. Cook the squash
    Two common methods:

    Roasting (best flavor)

    • Place halves cut-side down on a baking tray.
    • Roast at 200 °C / 400 °F for 30–40 minutes until soft.

    Boiling (faster)

    • Peel and cube the squash.
    • Boil for 10–15 minutes until tender.
  3. Mash
    • Scoop out the soft flesh into a bowl.
    • Add butter, milk, salt, and pepper.
    • Mash with a fork or potato masher until smooth.
  4. Adjust flavor
    • Taste and add extra butter, herbs, or spices.
