Canadian cheese soup

Canadian Cheese Soup is a creamy, comforting soup often made with vegetables, broth, and plenty of melted cheese. Many versions are inspired by the famous soup served at the EPCOT International Food & Wine Festival in the Canada Pavilion at EPCOT. 🧀🥣


Canadian Cheese Soup

Ingredients

  • 4 tbsp Butter
  • ½ cup diced Onion
  • ½ cup diced Celery
  • ½ cup diced Carrot
  • ¼ cup All-purpose flour
  • 3 cups Chicken broth
  • 1 cup Milk
  • 1 cup Heavy cream
  • 2 cups shredded Sharp cheddar cheese
  • 1 tsp Worcestershire sauce
  • ½ tsp Dry mustard
  • Salt and Black pepper to taste
  • Optional: ½ cup Beer (for authentic flavor)

Instructions

  1. Sauté vegetables
    Melt butter in a large pot over medium heat. Add onion, celery, and carrot and cook about 5 minutes until soft.
  2. Make the base
    Stir in flour and cook for 1–2 minutes to form a roux.
  3. Add liquids
    Slowly whisk in chicken broth, milk, and cream. Stir until smooth.
  4. Simmer
    Cook for 10–15 minutes, stirring occasionally, until slightly thickened.
  5. Add cheese
    Reduce heat to low and stir in cheddar cheese until melted.
  6. Season
    Add Worcestershire sauce, dry mustard, salt, and black pepper. Stir well.
  7. Optional step
    Stir in beer for extra depth of flavor.

  • Crusty bread
  • Pretzel bread
  • Or a toasted Baguette

⭐ Tip: Use extra-sharp cheddar for the strongest flavor, and add the cheese slowly so the soup stays smooth.
