Ingredients:

  • 3–4 lb pork roast (loin or shoulder)
  • 4–5 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano (optional)
  • 1 tsp paprika (optional, for color)
  • ½ cup chicken or vegetable broth

Instructions:

  1. Preheat the oven: 350°F (175°C).
  2. Prepare the pork: Pat the roast dry with paper towels. This helps it brown nicely.
  3. Make the herb mixture: In a small bowl, combine garlic, olive oil, salt, pepper, rosemary, thyme, oregano, and paprika.
  4. Rub the pork: Massage the herb mixture all over the roast, making sure to cover all sides.
  5. Sear the roast (optional but recommended): In a hot skillet, sear the pork on all sides for 2–3 minutes until golden brown.
  6. Roast in the oven: Place the pork in a roasting pan. Pour broth into the bottom of the pan to keep it moist. Roast for 1.5–2 hours (depending on size) or until internal temperature reaches 145°F (63°C).
  7. Rest the meat: Remove from oven, cover loosely with foil, and let it rest 10–15 minutes before slicing. This keeps it juicy.
  8. Serve: Slice and serve with your favorite sides like roasted vegetables, mashed potatoes, or a fresh salad.
