Wheat Thyme Chicken Salad 🥗🐔

This is a healthy, protein-rich salad combining tender chicken, whole wheat grains, and the earthy flavor of thyme. It’s great for lunch, meal prep, or a light dinner.


🧾 Ingredients (Serves 3–4)

  • 1 cup whole wheat berries (or cooked whole wheat grains)
  • 2 cups cooked chicken breast, shredded or diced
  • ½ cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • 2 tbsp fresh thyme leaves
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Optional:

  • ¼ cup crumbled feta cheese
  • ¼ cup toasted walnuts or almonds

👩‍🍳 Instructions

1️⃣ Cook the wheat berries
Boil wheat berries in salted water for 40–50 minutes until tender. Drain and let them cool.

2️⃣ Prepare the dressing
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, pepper, and thyme.

3️⃣ Combine ingredients
In a large bowl mix:

  • cooked wheat berries
  • chicken
  • cucumber
  • tomatoes
  • red onion

4️⃣ Add dressing
Pour the dressing over the salad and toss well.

5️⃣ Finish
Top with feta cheese and nuts if using.

  • Use rotisserie chicken for extra flavor and convenience.
  • Fresh thyme works best, but dried thyme (½ tsp) can be used.
  • Chill the salad 30 minutes before serving for better flavor.
