🥩 Ingredients (serves 4)

For the foil packets:

  • 1 ½ lbs (680g) sirloin steak, cut into 1-inch cubes

  • 1 lb (450g) baby potatoes, halved or quartered

  • 1 small onion, thinly sliced (optional)

  • 1 bell pepper, chopped (optional)

  • 2 tbsp olive oil

  • Salt and freshly ground black pepper, to taste

  • 1 tsp smoked paprika (optional)

For the garlic butter:

  • 4 tbsp unsalted butter, melted

  • 4 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped (or 1 tsp dried)

  • ½ tsp crushed red pepper flakes (optional)

  • Juice of ½ a lemon (optional, for brightness)


🔪 Instructions

  1. Prep your ingredients

    • Wash and cut the potatoes (keep small pieces so they cook quickly).

    • Cut steak into bite-size cubes. Pat dry and season well with salt, pepper, and paprika.

  2. Par-cook the potatoes (optional but helps crisp them up)

    • Boil or microwave them for 5–7 minutes until just fork-tender. Drain well.

  3. Mix the garlic butter

    • In a small bowl, combine melted butter, garlic, parsley, and optional red pepper flakes.

  4. Assemble foil packets

    • Lay out 4 large pieces of heavy-duty aluminum foil (about 12×12 inches).

    • Divide the potatoes, steak, and any vegetables evenly among them.

    • Drizzle with olive oil and half the garlic butter mixture. Toss gently to coat.

    • Fold up each foil packet: bring the long sides together, fold down tightly, then fold in the ends to seal.

  5. Cook

    • On the grill: Place packets on medium-high heat (about 425°F / 220°C) for 10–12 minutes per side, until steak is cooked to your liking and potatoes are golden.

    • In the oven: Bake at 425°F (220°C) for 20–25 minutes, flipping once halfway through.

  6. Finish and serve

    • Carefully open packets (watch the steam!). Drizzle with the remaining garlic butter and a squeeze of lemon.

    • Garnish with extra parsley and serve right in the foil for easy cleanup.


🔥 Tips

  • For extra crispy potatoes, broil the opened packets for 2–3 minutes at the end.

  • Use ribeye or New York strip for extra tenderness.

  • Add veggies like mushrooms, zucchini, or asparagus for variety.
