This dish features smoky grilled lobster tails topped with a rich, garlicky cowboy butter sauce—perfect for a special dinner or summer barbecue.


🥘 Ingredients (Serves 2–4)

For the lobster:

  • 4 lobster tails
  • 2 tbsp olive oil or melted butter
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Lemon wedges for serving

For the cowboy butter sauce:

  • ½ cup unsalted butter (melted)
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • ½ tsp chili flakes (optional)
  • 1 tbsp chopped parsley
  • 1 tsp fresh chives (optional)
  • Pinch of salt and pepper

👩‍🍳 Instructions

1️⃣ Prepare the lobster tails

  • Using kitchen scissors, cut the top shell of each lobster tail lengthwise.
  • Gently pull the meat up and place it on top of the shell (butterfly style).

2️⃣ Season

  • Brush lobster meat with olive oil or melted butter.
  • Sprinkle with paprika, garlic powder, salt, and pepper.

3️⃣ Grill

  • Preheat grill to medium-high heat (about 400°F / 200°C).
  • Place lobster tails meat side up on the grill.
  • Grill for 8–10 minutes until the meat is opaque and slightly charred.

4️⃣ Make cowboy butter sauce

  • In a small bowl, combine melted butter, garlic, lemon juice, Dijon mustard, paprika, chili flakes, parsley, chives, salt, and pepper.
  • Stir well.

5️⃣ Serve

  • Drizzle warm cowboy butter sauce over the grilled lobster tails.
  • Serve with lemon wedges.
