Ingredients (serves 6–8)

  • 1 (32 oz) bag frozen tater tots
  • 1 lb (450 g) breakfast sausage (pork or turkey), cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/2 cup diced bell peppers or onions

Method

1. Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2. Layer Ingredients

  • Spread half the tater tots evenly in the bottom of the dish.
  • Sprinkle cooked sausage over the tater tots.
  • Add any optional veggies.
  • Sprinkle half of the cheese over the sausage layer.
  • Top with the remaining tater tots.

3. Prepare Egg Mixture

  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Pour evenly over the casserole.

4. Bake

  • Cover with foil and bake for 35 minutes.
  • Remove foil, sprinkle remaining cheese on top, and bake for additional 10–15 minutes, until eggs are set and cheese is melted.

5. Serve

  • Let cool 5 minutes before slicing.
  • Serve with ketchup, hot sauce, or salsa if desired.

  • For extra flavor, add a pinch of smoked paprika or garlic powder to the egg mixture.
  • Swap sausage for bacon or diced ham for a different flavor.
