Boston cream pie cheesecake recipe

Here’s a decadent Boston Cream Pie Cheesecake recipe—rich, creamy cheesecake with a pastry cream layer and chocolate ganache, inspired by the classic dessert:


Ingredients (9-inch springform pan)

For the crust:

  • 1 ½ cups (150 g) graham cracker crumbs
  • ¼ cup (50 g) sugar
  • 6 tbsp (85 g) unsalted butter, melted

For the cheesecake:

  • 24 oz (680 g) cream cheese, softened
  • 1 cup (200 g) sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120 ml) heavy cream

For the pastry cream layer:

  • 1 cup (240 ml) milk
  • 3 tbsp sugar
  • 2 tbsp cornstarch
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp butter

For the chocolate ganache:

  • ½ cup (120 ml) heavy cream
  • 4 oz (115 g) semisweet chocolate, chopped

Instructions

1. Prepare the crust:

  • Preheat oven to 350°F (175°C).
  • Mix graham cracker crumbs, sugar, and melted butter.
  • Press firmly into the bottom of a greased 9-inch springform pan.
  • Bake 8–10 minutes. Let cool.

2. Make the pastry cream:

  • In a saucepan, heat milk until just boiling.
  • Whisk egg yolks, sugar, and cornstarch in a bowl.
  • Slowly pour hot milk into the yolk mixture, whisking constantly.
  • Return to the saucepan, cook on medium until thickened.
  • Remove from heat, stir in butter and vanilla. Cool completely.

3. Make the cheesecake:

  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time, then vanilla and heavy cream.
  • Pour half of the cheesecake batter over the cooled crust.
  • Spread cooled pastry cream on top.
  • Pour remaining cheesecake batter over the pastry cream.
  • Smooth the top.

4. Bake the cheesecake:

  • Bake at 325°F (160°C) for 55–65 minutes, until the center is almost set.
  • Cool at room temperature, then refrigerate at least 4 hours, preferably overnight.

5. Make the ganache:

  • Heat heavy cream until hot but not boiling.
  • Pour over chopped chocolate. Let sit 1–2 minutes, then stir until smooth.
  • Pour ganache over chilled cheesecake.

6. Serve:

  • Chill until ganache sets. Slice and enjoy!

✅ Tips:

  • Use a water bath for a smoother cheesecake if you want a silky texture.
  • For extra flair, pipe a few swirls of pastry cream on top before adding ganache.
  • Let slices come to room temperature for 10–15 minutes for easier serving.
