Here’s a hearty and simple recipe for a Cheesy Potato and Ground Beef Skillet Dish—perfect for a one-pan meal:


Ingredients (Serves 4)

  • 1 lb (≈450 g) ground beef
  • 4 cups diced potatoes (peeled or unpeeled, small cubes)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or Italian seasoning
  • 1–1 1/2 cups shredded cheddar cheese
  • 2 tbsp olive oil or butter
  • Optional garnish: chopped green onions or parsley

Instructions

  1. Cook the Potatoes:
    • Heat 1 tbsp olive oil or butter in a large skillet over medium heat.
    • Add diced potatoes and cook, stirring occasionally, for 10–12 minutes until they begin to soften.
    • Remove from skillet and set aside.
  2. Cook the Ground Beef:
    • In the same skillet, add the remaining oil (if needed).
    • Cook ground beef with onions and garlic until browned and cooked through. Drain excess fat if necessary.
    • Add bell pepper, paprika, salt, pepper, and thyme; cook 2–3 minutes.
  3. Combine & Cook:
    • Return the potatoes to the skillet and stir to combine with the beef mixture.
    • Cover and cook for another 5–7 minutes until potatoes are tender.
  4. Add Cheese:
    • Sprinkle shredded cheese evenly over the skillet.
    • Cover and cook 2–3 minutes until the cheese melts.
  5. Serve:
    • Garnish with chopped green onions or parsley and serve hot.

💡 Tips

  • For extra flavor, add 1/4 cup beef or chicken broth when combining potatoes and beef to keep everything moist.
  • You can swap cheddar for Monterey Jack, Colby, or a cheese blend for a different flavor.
  • Optional: add frozen corn or peas in the last 5 minutes for more veggies.
