Here’s a light, fluffy 7 Up cake recipe that uses fresh citrus juice for a bright, zesty flavor — a classic made even fresher with lemons or oranges.


🍰 7 Up Citrus Cake

Ingredients

Cake:

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup vegetable oil
  • 1 cup 7 Up (or any lemon-lime soda)
  • 3 large eggs
  • 2 tablespoons fresh lemon juice (or orange juice)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon or orange

Optional Glaze:

  • 1 cup powdered sugar
  • 2–3 tablespoons fresh citrus juice

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C). Grease and flour a 9×13-inch baking pan or bundt pan.
  2. Mix dry ingredients
    • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Combine wet ingredients
    • In another bowl, mix softened butter, oil, eggs, 7 Up, fresh citrus juice, vanilla, and zest until smooth.
  4. Combine wet and dry
    • Gradually add wet ingredients to dry, stirring until just combined. Do not overmix.
  5. Bake
    • Pour batter into prepared pan. Bake 35–45 minutes (for 9×13 pan) or 50–60 minutes (for bundt pan), or until a toothpick comes out clean.
  6. Cool and glaze
    • Let cake cool in the pan for 10–15 minutes.
    • For extra citrus flavor, whisk powdered sugar with 2–3 tablespoons fresh citrus juice and drizzle over warm cake.

Tips

  • Using fresh citrus juice makes the flavor brighter and less artificial than just soda flavoring.
  • You can fold in poppy seeds or a handful of fresh berries for extra texture.
  • For a lighter cake, swap half the oil with unsweetened applesauce.
