🛒 Ingredients

  • 1 lb (450 g) sausage (Italian, smoked, or breakfast sausage), sliced or crumbled
  • 4 medium potatoes, diced
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 2–3 tbsp olive oil
  • Salt & pepper to taste
  • Optional: paprika, dried herbs, shredded cheese, or fresh parsley

1️⃣ Cook the Sausage

  • Heat 1 tbsp oil in a large skillet over medium heat.
  • Add sausage and cook until browned and cooked through.
  • Remove sausage from skillet and set aside, leaving some fat for flavor.

2️⃣ Cook the Potatoes

  • Add remaining oil if needed.
  • Sauté diced potatoes over medium heat, stirring occasionally, until golden and tender (10–15 minutes).
  • Add onions and bell peppers halfway through cooking.

3️⃣ Add Garlic & Combine

  • Stir in garlic and cook 1–2 minutes until fragrant.
  • Return sausage to the skillet and mix everything together.
  • Season with salt, pepper, paprika, or herbs.

4️⃣ Optional Cheese Finish

  • Sprinkle shredded cheese on top, cover for 1–2 minutes to melt.

5️⃣ Serve

  • Serve hot straight from the skillet.
  • Garnish with fresh parsley if desired.
