🛒 Ingredients

  • 8 small flour tortillas
  • 2 cups cooked shredded chicken (or ground beef)
  • 1 1/2 cups pizza sauce (or marinara)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni or cooked sausage (optional)
  • 1/2 tsp Italian seasoning
  • Optional toppings: sliced olives, bell peppers, fresh basil

👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Prepare the Filling

  • Mix shredded chicken, half the cheese, Italian seasoning, and any optional toppings in a bowl.

3️⃣ Assemble Enchiladas

  1. Spoon filling into each tortilla.
  2. Roll up and place seam-side down in the baking dish.
  3. Pour pizza sauce evenly over the rolled tortillas.
  4. Sprinkle remaining cheese and pepperoni on top.

4️⃣ Bake

  • Cover with foil and bake 20 minutes.
  • Remove foil and bake another 5–10 minutes, until cheese is melted and bubbly.

5️⃣ Serve

  • Garnish with fresh basil or chopped parsley.
  • Serve with a side salad or garlic bread.

  • Vegetarian version: Use sautéed mushrooms, bell peppers, or zucchini instead of meat.
  • Extra cheesy: Mix ricotta or cream cheese into the filling.
  • Make ahead: Assemble the night before and bake the next day.
