🌮 Beef Enchiladas (Easy & Cheesy)
A hearty, flavor-packed dinner with seasoned beef, melty cheese, and rich enchilada sauce.
🛒 Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/2 cup water
- 1 can (10 oz) red enchilada sauce
- 8 small flour or corn tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- Optional: diced green chiles, black olives, cilantro
👩🍳 Instructions
1️⃣ Cook the Filling
- Brown ground beef in a skillet over medium heat.
- Add onion and cook until soft.
- Stir in garlic; cook 30 seconds.
- Add taco seasoning and water. Simmer 3–4 minutes until thickened.
2️⃣ Assemble
- Preheat oven to 375°F (190°C).
- Spread a thin layer of enchilada sauce in a 9×13 baking dish.
- Spoon beef mixture into each tortilla.
- Add a little cheese, roll up, and place seam-side down in dish.
- Pour remaining sauce over the top.
- Sprinkle with remaining cheese.
3️⃣ Bake
- Bake 20–25 minutes until bubbly and cheese is melted.
- Let rest 5 minutes before serving.
