Slow Cooker Chicken and Onions 🍗🧅

A simple, comforting recipe with tender chicken and sweet, caramelized onions — perfect over rice, mashed potatoes, or noodles.


🛒 Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts or thighs
  • 2–3 large onions, sliced
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 teaspoon dried thyme (or Italian seasoning)
  • ½ teaspoon paprika
  • Salt & black pepper, to taste
  • Optional: 1 tablespoon Worcestershire sauce

🥣 Instructions

1️⃣ Layer onions:
Place sliced onions in the bottom of the slow cooker. Drizzle with olive oil or add small pieces of butter.

2️⃣ Season chicken:
Sprinkle chicken with salt, pepper, thyme, and paprika. Place on top of onions.

3️⃣ Add flavor:
Add garlic, broth, and Worcestershire sauce (if using).

4️⃣ Cook:

  • LOW for 6–7 hours
  • HIGH for 3–4 hours
    Chicken should reach 165°F (74°C) internally.

5️⃣ Finish & serve:
Stir gently so onions coat the chicken. Serve with juices spooned over the top.


🌟 Optional Variations

🧀 Cheesy Version: Add provolone or mozzarella during the last 15 minutes.
🍄 With Mushrooms: Add sliced mushrooms for extra depth.
🍯 Sweet & Savory: Add 1 tablespoon honey or balsamic vinegar.
🥔 One-Pot Meal: Add baby potatoes or carrots at the bottom.


💡 Tips

  • Thighs stay juicier than breasts in slow cookers.
  • If sauce is too thin, remove lid last 30 minutes to reduce.
  • For deeper flavor, sear chicken before adding to slow cooker (optional).
