Fried zucchini

Here’s a simple and delicious recipe for Fried Zucchini — crispy on the outside, tender on the inside, and perfect as a snack or side dish. 🥒✨


🥒 Fried Zucchini

Serves: 2–4

Prep Time: 10 minutes

Cook Time: 10–15 minutes


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds or sticks

  • 1/2 cup (60 g) all-purpose flour

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder (optional)

  • 1/2 cup (50 g) grated Parmesan cheese (optional)

  • 2 eggs, beaten

  • 1 cup (100 g) breadcrumbs (panko for extra crunch)

  • Vegetable oil for frying


Instructions

1. Prepare zucchini

  • Wash and slice zucchini into rounds or sticks.

  • Pat dry with paper towels to remove excess moisture.


2. Prepare dredging stations

  1. In one bowl, mix flour, salt, pepper, and garlic powder (and Parmesan if using).

  2. In a second bowl, beat eggs.

  3. In a third bowl, place breadcrumbs.


3. Coat zucchini

  • Dredge zucchini slices in flour mixture, dip in egg, then coat with breadcrumbs.


4. Fry zucchini

  • Heat 1/4–1/2 inch of vegetable oil in a skillet over medium heat.

  • Fry zucchini in batches 2–3 minutes per side until golden brown.

  • Transfer to a plate lined with paper towels to drain excess oil.


5. Serve

  • Serve warm with dipping sauces like ranch, marinara, or aioli.


💡 Tips

  • Extra crispy: Use panko breadcrumbs for a crunchier texture.

  • Baked alternative: Bake at 425°F (220°C) for 15–20 minutes, flipping halfway, for a healthier version.

  • Flavor variations: Add paprika, cayenne, or Italian seasoning to the breadcrumbs for extra zing.
