Classic Hibachi Chicken

Here’s a restaurant-style Classic Hibachi Chicken recipe you can make at home — just like at a Japanese steakhouse.


🍗🔥 Classic Hibachi Chicken

🛒 Ingredients

For the Chicken

  • 1½ lbs boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon mirin (optional but authentic)
  • Salt & black pepper to taste

Optional Vegetables (like at the grill)

  • Zucchini, sliced
  • Mushrooms
  • Onion chunks
  • 1 tablespoon soy sauce
  • 1 tablespoon butter

👩‍🍳 Instructions

1️⃣ Prep

Pat chicken dry and season lightly with salt and pepper.

2️⃣ Cook the chicken

Heat a large skillet or flat griddle over medium-high heat.
Add oil, then chicken in a single layer.
Cook 4–5 minutes without stirring to get browning.

Flip and cook another 3–4 minutes until nearly done.

3️⃣ Add flavor

Push chicken to one side. Add butter, garlic, and ginger to the pan.
Cook 30 seconds until fragrant.
Stir everything together.

Add soy sauce and mirin. Cook another 1–2 minutes until chicken is fully cooked and slightly glazed.

4️⃣ Cook vegetables (optional)

In the same pan, sauté vegetables in butter and soy sauce until tender-crisp.


🍚 Serve With

  • Hibachi fried rice
  • Steamed rice
  • Yum Yum sauce
  • Ginger dipping sauce

🥣 Quick Yum Yum Sauce (Steakhouse Style)

Mix:

  • ½ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon melted butter
  • 1 teaspoon sugar
  • ½ teaspoon garlic powder
  • Splash of rice vinegar or water to thin

Chill 30 minutes before serving.


💡 Tips for That Restaurant Flavor

  • Use high heat for slight char.
  • Don’t overcrowd the pan.
  • A flat cast-iron skillet works great if you don’t have a griddle.
  • Finish with a tiny squeeze of lemon for brightness.
