🐖🍒 Slow Cooker Pork Loin with Cranberry Sauce

🛒 Ingredients

  • 2–3 lb pork loin (boneless)
  • 1 can (14 oz) whole berry cranberry sauce (like Ocean Spray Whole Berry Cranberry Sauce)
  • ½ cup chicken broth
  • ¼ cup orange juice
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • ½ teaspoon dried rosemary (or 1 teaspoon fresh)
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon cold water (if thickening)

👩‍🍳 Instructions

1️⃣ Prep the pork

Pat pork loin dry and season lightly with salt and pepper.

(Optional but recommended): Sear in a hot skillet with a little oil for 2–3 minutes per side to lock in flavor.

2️⃣ Make the cranberry sauce mixture

In a bowl, whisk together:

  • Cranberry sauce
  • Chicken broth
  • Orange juice
  • Brown sugar
  • Dijon mustard
  • Soy sauce
  • Garlic
  • Rosemary
  • Black pepper

3️⃣ Slow cook

  • Place pork loin in the slow cooker.
  • Pour cranberry mixture over the top.
  • Cover and cook:
    • LOW: 6–8 hours
    • HIGH: 3–4 hours

Pork is done when internal temperature reaches 145°F (63°C).

4️⃣ Thicken the sauce (optional)

Remove pork and cover to rest.
Mix cornstarch + cold water, stir into slow cooker juices.
Cook on HIGH for 10–15 minutes until thickened.

5️⃣ Slice & serve

Slice pork and spoon warm cranberry sauce over top.

💡 Tips

  • For a holiday twist, add orange zest or a pinch of cinnamon.
