Grandma’s Sweet Mexican Pancakes

Posted on November 2, 2025 by Admin
Ah, Grandma’s Sweet Mexican Pancakes — these are usually soft, slightly sweet, and often flavored with cinnamon and vanilla, perfect for breakfast or a cozy treat. They’re lighter than American pancakes but rich in flavor and often served with syrup, honey, or fruit. Here’s a traditional-style recipe:

🥞 Grandma’s Sweet Mexican Pancakes

Serves: 4–6

Prep Time: 10 minutes

Cook Time: 15–20 minutes

Ingredients

  • 1 ½ cups (180 g) all-purpose flour

  • 3 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 tsp ground cinnamon

  • 1 cup (240 ml) milk

  • 2 large eggs

  • 2 tbsp melted butter (plus more for cooking)

  • 1 tsp vanilla extract

Instructions

1. Mix dry ingredients

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

2. Mix wet ingredients

  • In a separate bowl, beat eggs, then whisk in milk, melted butter, and vanilla.

3. Combine

  • Gradually stir wet ingredients into dry ingredients until just combined. Do not overmix; a few lumps are fine.

4. Cook the pancakes

  1. Heat a nonstick skillet or griddle over medium heat and lightly butter it.

  2. Pour about ¼ cup batter per pancake onto the skillet.

  3. Cook 2–3 minutes until bubbles form on the surface and edges look set.

  4. Flip and cook 1–2 more minutes until golden and cooked through.

5. Serve

  • Stack pancakes and serve warm with maple syrup, honey, fresh fruit, or a sprinkle of cinnamon sugar.

💡 Tips

  • Fluffier pancakes: Separate the eggs and beat the whites until stiff, then fold them in at the end.

  • Sweet variation: Add a handful of raisins, chocolate chips, or chopped nuts to the batter.

  • Authentic touch: A little orange zest or a splash of vanilla enhances the traditional flavor.

If you like, I can give a “Grandma’s Special Mexican Style” version with cajeta or dulce de leche drizzle, which makes them extra indulgent and authentic. Do you want that version?
