Here’s a hearty, comforting Sausage and Rice Casserole recipe — easy to make and perfect for a weeknight dinner.


🍲 Sausage and Rice Casserole

🧂 Ingredients (Serves 4–6)

  • 1 lb (≈450 g) sausage (Italian, smoked, or your favorite), sliced or crumbled
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell pepper, chopped (optional)
  • 1 cup frozen peas or mixed vegetables
  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt & pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)

👩‍🍳 Instructions

1️⃣ Preheat & Cook Sausage

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook sausage until browned. Remove and set aside.

2️⃣ Sauté Vegetables

  • In the same skillet, sauté onion, garlic, and bell pepper until soft (~5 minutes).

3️⃣ Combine Ingredients

  • In a large mixing bowl, combine:
    • Uncooked rice
    • Chicken broth
    • Cooked sausage and vegetables
    • Paprika, thyme, salt, and pepper
    • Frozen peas

4️⃣ Bake the Casserole

  • Pour mixture into a greased baking dish (≈9×13 inch).
  • Cover with foil and bake 35–40 minutes, or until rice is tender and liquid is absorbed.

5️⃣ Add Cheese

  • Remove foil, sprinkle cheese over the top, and bake 5–10 minutes until melted and bubbly.

🍽️ Serving Suggestions

  • Serve with a side salad or steamed green vegetables
  • Garnish with fresh parsley for color

🔥 Tips

  • Use uncooked rice, not instant, for best texture
  • For extra flavor, use spicy sausage or add a dash of hot sauce
  • Leftovers reheat well in the oven or microwave
