🛒 Ingredients (Serves 4)

  • 1.5 lbs (700 g) baby or Yukon gold potatoes, halved or quartered
  • 4 tbsp unsalted butter
  • 3 tbsp grated Parmesan cheese
  • 2–3 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Optional: chopped parsley for garnish

👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat to 425°F (220°C). Line a baking sheet with parchment paper.

2️⃣ Brown the Butter

  • In a small saucepan, melt butter over medium heat.
  • Cook until it foams and turns golden brown with a nutty aroma (about 3–4 minutes).
  • Remove from heat and stir in minced garlic and thyme.

3️⃣ Prepare Potatoes

  • Toss halved or quartered potatoes in the browned butter mixture until evenly coated.
  • Sprinkle with salt, pepper, and 2 tablespoons of Parmesan.

4️⃣ Roast

  • Spread potatoes in a single layer on the prepared baking sheet.
  • Roast 25–30 minutes, flipping halfway through, until golden and crispy.

5️⃣ Finish

  • Remove from oven and sprinkle remaining Parmesan over potatoes.
  • Garnish with chopped parsley if desired.

6️⃣ Serve

  • Serve hot as a side for steak, chicken, or roasted vegetables.

  • Extra crisp: Parboil potatoes for 5 minutes before roasting.
  • Herb variation: Swap thyme for rosemary or oregano.
