A hearty and flavorful meal where tender pork chops are filled with a savory stuffing and slow-cooked to juicy perfection. Perfect for an easy dinner with minimal hands-on time.


🧂 Ingredients (Serves 4)

Pork & Stuffing

  • 4 thick-cut bone-in or boneless pork chops
  • 1 cup stuffing mix (dry or leftover cooked stuffing)
  • 2 tbsp butter or olive oil

  • ¼ cup diced celery
  • 1 garlic clove, minced
  • ¼ cup chicken broth or stock (optional, for moist stuffing)
  • Salt & pepper to taste

Slow Cooker Flavor

  • ½ cup chicken broth
  • 1 tsp dried thyme or sage
  • 1 tsp paprika (optional)

1️⃣ Prepare the Stuffing

  1. In a small skillet, melt butter over medium heat.
  2. Sauté onions, celery, and garlic until soft (~3–4 minutes).
  3. Mix in stuffing and a splash of broth until slightly moist. Season with salt, pepper, and herbs.

2️⃣ Stuff the Pork Chops

  • Using a sharp knife, cut a pocket horizontally in each pork chop (don’t cut all the way through).
  • Stuff each chop generously with the prepared stuffing. Secure with toothpicks if needed.

3️⃣ Place in Slow Cooker

  • Lightly grease the slow cooker.
  • Place stuffed chops in a single layer.
  • Pour ½ cup chicken broth over the chops. Sprinkle with thyme and paprika.

4️⃣ Cook

  • Low: 4–5 hours
  • High: 2–3 hours
  • Pork should reach an internal temperature of 145°F (63°C).

5️⃣ Finish & Serve

  • Remove toothpicks before serving.
  • Optional: Thicken cooking juices into a gravy by transferring to a saucepan and stirring in a slurry of cornstarch + water, cooking until thickened.
