Here’s a classic, comforting version of Mexican White Trash Casserole — creamy, cheesy, and easy to throw together 🌮🧀


🌮 Mexican White Trash Casserole

🛒 Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
  • 1½ cups shredded Mexican-blend cheese (divided)
  • 1 bag (9–10 oz) Nacho Cheese Doritos, lightly crushed
  • ½ cup chopped onion (optional)
  • ½ cup black beans or corn (optional add-ins)

👩‍🍳 Instructions

1️⃣ Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.

2️⃣ Cook the meat
In a skillet over medium heat, brown ground beef and onion. Drain excess grease.
Stir in taco seasoning and a splash of water (per packet instructions). Simmer 2–3 minutes.

3️⃣ Make the creamy mixture
In a bowl, mix together:

  • Cream of chicken soup
  • Sour cream
  • Diced tomatoes

4️⃣ Layer the casserole

  • Spread half the crushed Doritos on the bottom.
  • Add half the meat mixture.
  • Spread half the creamy mixture.
  • Sprinkle with ¾ cup cheese.
  • Repeat layers, ending with cheese on top.

5️⃣ Bake
Bake uncovered for 20–25 minutes until hot and bubbly.

6️⃣ Rest & serve
Let sit 5–10 minutes before serving. Top with:

  • Chopped cilantro
  • Green onions
  • Jalapeños
  • Salsa or guacamole

🔥 Variations

  • Swap beef for shredded rotisserie chicken
  • Use cream of mushroom instead
  • Add a layer of refried beans
  • Make it spicier with hot Rotel or taco sauce
