🍓 Creamy Strawberry Crêpes

🛒 Ingredients

For the Crêpes:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 2 large eggs
  • 1½ cups milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For the Creamy Filling:

  • 1 cup heavy whipping cream
  • 4 oz cream cheese (softened)
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract

For the Topping:

  • 1½ cups fresh strawberries (sliced)
  • 1–2 tablespoons sugar (optional, for macerating strawberries)
  • Powdered sugar (for dusting)

👩‍🍳 Instructions

1️⃣ Make the Crêpe Batter

  1. In a mixing bowl, whisk together flour, sugar, and salt.
  2. Add eggs and gradually whisk in milk until smooth.
  3. Stir in melted butter and vanilla extract.
  4. Let batter rest for 15–30 minutes (this helps create tender crêpes).

2️⃣ Cook the Crêpes

  1. Heat a non-stick skillet over medium heat and lightly grease it.
  2. Pour about ¼ cup batter into the pan, swirling to coat the bottom thinly.
  3. Cook for 1–2 minutes until edges lift slightly, then flip and cook another 30–60 seconds.
  4. Repeat with remaining batter, stacking crêpes on a plate.

3️⃣ Prepare the Cream Filling

  1. Beat heavy cream until soft peaks form.
  2. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  3. Gently fold whipped cream into the cream cheese mixture until light and fluffy.

4️⃣ Prepare Strawberries

  • Toss sliced strawberries with 1–2 tablespoons sugar and let sit for 10 minutes to release juices (optional but delicious!).

5️⃣ Assemble

  1. Spread creamy filling down the center of each crêpe.
  2. Top with strawberries.
  3. Fold or roll the crêpes.
  4. Dust with powdered sugar and serve.

✨ Optional Add-Ons

  • Drizzle with chocolate syrup
  • Add a spoonful of strawberry jam
  • Sprinkle with toasted almonds
  • Serve with a scoop of vanilla ice cream
