🥩 Basic Steak Marinade

Ingredients (for 1–2 lbs / 450–900 g steak):

  • ¼ cup soy sauce

  • ¼ cup olive oil

  • 2–3 tablespoons Worcestershire sauce

  • 1–2 tablespoons lemon juice or vinegar (adds tenderness)

  • 1–2 teaspoons Dijon mustard (optional, adds depth)

  • 1–2 teaspoons black pepper

  • Optional: fresh herbs (rosemary, thyme)

Instructions:

  1. Combine all ingredients in a bowl or resealable plastic bag.

  2. Add the steak, making sure it’s fully coated.

  3. Cover (or seal the bag) and refrigerate. Marinate:

    • Quick: 30 minutes–1 hour

    • Best flavor/tenderness: 4–6 hours

    • Maximum: 24 hours (avoid longer to prevent meat breakdown)

  4. Remove steak from marinade and pat dry before cooking (prevents steaming).

  5. Cook steak to your preferred doneness: grill, pan-sear, or broil.

  • Acid balance: Too much lemon or vinegar can make the meat mushy. Keep it moderate.

  • Marinade time: Thin cuts need less time; thick cuts benefit from longer marination.

  • Oil: Helps the steak stay juicy and prevents sticking to grill or pan.

  • Salt: Soy sauce already contains salt. If adding extra, adjust carefully.

  • Flavor boost: Add a splash of red wine, balsamic vinegar, or hot sauce for extra depth.

  1. Asian-style: Soy sauce, sesame oil, ginger, garlic, a little brown sugar, and chili flakes.

  2. Garlic & Herb: Olive oil, minced garlic, rosemary, thyme, parsley, black pepper.

  3. Balsamic Steak: Balsamic vinegar, olive oil, garlic, Dijon mustard, honey.

  4. Spicy Marinade: Soy sauce, olive oil, garlic, hot paprika or cayenne, chili sauce.
