🍜 Mongolian Ground Beef Noodles

A quick, savory-sweet stir-fry inspired by Mongolian-style beef—made faster and more budget-friendly with ground beef.

  • 12 oz (340 g) noodles (lo mein, spaghetti, or rice noodles)
  • 1 lb (450 g) ground beef (80–90% lean)
  • 3–4 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • ½ cup low-sodium soy sauce
  • â…“ cup brown sugar (adjust to taste)
  • ½ cup beef broth or water
  • 1 tbsp hoisin sauce (optional, for depth)
  • 1–2 tsp cornstarch (to thicken)
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • 1–2 cups veggies (broccoli, bell peppers, snow peas—optional)
  • Red pepper flakes (optional)

👩‍🍳 Instructions

  1. Cook noodles according to package directions; drain and set aside.
  2. Brown beef in a large skillet over medium-high heat. Drain excess fat if needed.
  3. Add aromatics: Stir in garlic and ginger; cook 30 seconds.
  4. Make sauce: Whisk soy sauce, brown sugar, broth, hoisin, and cornstarch.
  5. Combine: Pour sauce into skillet; simmer 2–3 minutes until slightly thickened.
  6. Add veggies & noodles: Toss everything together; cook 2–3 minutes.
  7. Finish: Drizzle sesame oil, top with green onions (and red pepper flakes).

🔥 Tips

  • For extra flavor, add a splash of rice vinegar or a squeeze of lime.
  • Swap beef for ground turkey or plant-based crumbles.
  • Double the sauce if you like it extra saucy.
