Here’s a simple, tasty way to cook green beans and potatoes together — a classic comfort food side dish.


🥔 Green Beans and Potatoes (Sautéed / Skillet Version)

Ingredients

  • 1 lb green beans, trimmed
  • 1 lb small potatoes (Yukon gold, red, or baby potatoes), diced or halved
  • 2–3 tablespoons olive oil or butter
  • 1 medium onion, chopped (optional)
  • 2–3 cloves garlic, minced
  • Salt and black pepper, to taste
  • ½ teaspoon paprika or dried herbs (optional: thyme, rosemary)
  • 2–3 slices cooked bacon, crumbled (optional, for extra flavor)

Instructions

1️⃣ Boil the potatoes

  • Place diced potatoes in a pot, cover with water, add a pinch of salt.
  • Boil 8–10 minutes until just tender. Drain and set aside.

2️⃣ Blanch the green beans

  • Boil green beans 2–3 minutes in salted water until bright green and slightly tender.
  • Drain and immediately place in cold water (stops cooking).

3️⃣ Sauté vegetables

  • Heat olive oil or butter in a large skillet over medium heat.
  • Add onions (if using) and sauté 2–3 minutes until translucent.
  • Add garlic and sauté 30 seconds.

4️⃣ Cook potatoes & beans together

  • Add potatoes to the skillet, cook 5–6 minutes until lightly browned.
  • Add green beans, salt, pepper, paprika/herbs. Toss and cook another 3–5 minutes until everything is tender and slightly caramelized.

5️⃣ Finish & Serve

  • Stir in bacon if using.
  • Taste and adjust seasoning.
  • Serve warm as a side dish with chicken, fish, or steak.

🍽️ Tips / Variations

  • Garlic butter version: Use butter and minced garlic, skip bacon, sprinkle parsley at the end.
  • Oven-roasted version: Toss potatoes and green beans with olive oil, garlic, and herbs, roast at 400°F (200°C) for 20–25 min.
  • Lemon twist: Add a squeeze of lemon juice or zest for a bright, fresh flavor.
