🍍 Pineapple Baked Chicken

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 cup pineapple chunks (fresh or canned, drained if canned)
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated (optional but amazing)
  • 1 tbsp olive oil
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tbsp cornstarch + 1 tbsp water (optional, for thicker sauce)

Instructions

  1. Preheat oven to 375°F / 190°C.
  2. Make the sauce
    Mix pineapple juice, soy sauce, brown sugar, garlic, ginger, oil, pepper, and paprika.
  3. Assemble
    Place chicken in a baking dish.
    Pour sauce over the top.
    Scatter pineapple chunks around and over chicken.
  4. Bake
    Bake 30–40 minutes (internal temp 165°F / 74°C).
    Baste halfway through for extra flavor.
  5. Thicken (optional)
    Remove chicken. Pour sauce into a small pan.
    Stir in cornstarch slurry and simmer until thick.
    Spoon back over chicken.
  6. Serve
    Garnish with green onions or sesame seeds.
    Serve over rice.
