Meatball casserole

Ooo yes 😌 meatball casserole is pure comfort. Here’s a classic, crowd-pleasing version, plus a few tasty swaps if you wanna riff.

Cheesy Meatball Casserole (Easy + Cozy)

Ingredients

  • 1 lb (450 g) meatballs (beef, pork, turkey, or plant-based)
  • 2–3 cups marinara or tomato sauce
  • 2 cups cooked pasta or sliced potatoes or cooked rice (pick your base)
  • 1½–2 cups shredded mozzarella
  • ½ cup grated Parmesan
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt & pepper
  • Optional: sliced mushrooms, bell peppers, spinach, olives

Instructions

  1. Preheat oven to 375°F / 190°C.
  2. If meatballs are raw, brown or bake them first until mostly cooked.
  3. In a baking dish, layer:
    • Pasta/potatoes/rice
    • Meatballs
    • Sauce + seasonings + veggies
  4. Sprinkle mozzarella and Parmesan on top.
  5. Cover with foil and bake 25 minutes.
  6. Uncover and bake another 10–15 minutes until bubbly and golden.
  7. Rest 5 minutes. Serve with garlic bread or a simple salad.

Fun variations

  • Swedish-style: cream sauce, beef meatballs, egg noodles, nutmeg
  • Spicy: add chili flakes, spicy marinara, or pepper jack cheese
  • Low-carb: swap pasta for zucchini slices or cauliflower
  • Extra cozy: add ricotta or béchamel between layers
