Tender chops, rich onion gravy… let’s do it right.
Classic Smothered Pork Chops
Ingredients
- 4 bone-in pork chops (¾–1 inch thick)
- Salt & black pepper
- 1 tsp garlic powder
- ½ tsp paprika
- ½ cup all-purpose flour
- 2 tbsp oil
- 2 tbsp butter
- 1 large onion, sliced
- 2 cups chicken or beef broth
- Optional: thyme, Worcestershire sauce
Instructions
- Season & dredge
Season pork chops with salt, pepper, garlic powder, and paprika.
Lightly dredge in flour (save extra flour). - Brown the chops
Heat oil in a large skillet over medium-high.
Sear chops 3–4 minutes per side until golden. Remove and set aside. - Cook the onions
Add butter to the skillet. Add onions and a pinch of salt.
Cook until soft and lightly browned (8–10 minutes). - Make the gravy
Sprinkle 2 tbsp of the leftover flour over onions. Stir 1 minute.
Slowly add broth, scraping up browned bits.
Add thyme or a dash of Worcestershire if using. - Smother & simmer
Return pork chops to the skillet. Spoon gravy over them.
Cover and simmer on low 25–30 minutes, until tender. - Serve
Taste gravy and adjust seasoning.

Pro tips
- Bone-in chops stay juicier
- Low and slow = tender (don’t rush the simmer)
