Yesss — Khanom chin (ขนมจีน) 🤍
Those soft rice noodles with bold, aromatic curries? Elite Thai comfort food.

Here’s a clear, home-cook friendly breakdown so it’s not intimidating.

What Khanom Chin Is

  • Fermented rice noodles (soft, slightly tangy)
  • Served cold or room temp
  • Topped with hot curry or sauce
  • Finished with fresh herbs, veggies, and crunch

Think of it as a build-your-own noodle bowl, Thai-style.

Classic Khanom Chin Nam Ya (Fish Curry Version)

Ingredients (Curry)

  • 12 oz white fish (tilapia, cod, or catfish)
  • 1 cup coconut milk
  • 1 cup fish stock or water
  • 2 tbsp red curry paste
  • 1 tbsp fermented fish sauce (pla ra, optional but authentic)
  • 1 tbsp fish sauce
  • 1 tsp palm sugar or brown sugar
  • Kaffir lime leaves (optional)

Noodles & Toppings

  • Khanom chin noodles (or thin rice vermicelli if unavailable)
  • Bean sprouts
  • Cabbage, finely sliced
  • Long beans or green beans
  • Fresh herbs: cilantro, Thai basil
  • Lime wedges
  • Pickled mustard greens (optional)
  • Chili flakes or fresh chilies

How

  1. Cook fish in water until just done. Remove, flake finely.
  2. Pound or blend fish until smooth (this thickens the sauce).
  3. Simmer coconut milk + curry paste until fragrant.
  4. Add fish stock, flaked fish, fish sauce, sugar, lime leaves.
  5. Simmer gently 10–15 minutes until thick and savory.
  6. Taste — it should be rich, slightly sweet, and funky (in a good way).

To Serve

  1. Place noodles in a bowl.
  2. Ladle hot curry over noodles.
  3. Add veggies, herbs, lime, and chili to taste.

Popular Variations

  • Nam Prik – chili-based, spicy and bold
  • Nam Ngiao (Northern Thai) – tomato, pork, fermented soy
  • Green curry version – rich and aromatic
  • Southern style – extra spicy, very intense flavor

Pro tips

  • Noodles should be rinsed and loosely coiled, not clumped
  • Balance is everything: salty + spicy + fresh
  • The raw veggies are not garnish — they’re essential
