Sure! Let’s make some Egg Rolls — crispy, golden wrappers stuffed with savory filling. I’ll give you both a classic takeout-style version and a Mediterranean-inspired twist (since you mentioned Mediterranean before).


🥢 Classic Egg Rolls (Chinese Takeout Style)

Ingredients (makes about 10 egg rolls):

For the filling:

  • 1 tbsp oil (vegetable or sesame)

  • ½ lb (225 g) ground pork or chicken

  • 1 cup shredded cabbage

  • ½ cup shredded carrots

  • 2 green onions, sliced

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • ½ tsp ground ginger (or 1 tsp fresh grated)

  • Salt & pepper to taste

For wrapping & frying:

  • 10 egg roll wrappers (found in the refrigerated section)

  • 1 egg, beaten (for sealing)

  • Oil for frying (canola or vegetable)


Directions:

  1. Cook the filling:
    Heat oil in a pan over medium-high heat. Add ground meat and cook until browned.
    Add garlic, cabbage, carrots, and green onions. Stir-fry for 2–3 minutes until softened.
    Season with soy sauce, sesame oil, ginger, salt, and pepper. Let cool slightly.

  2. Assemble:
    Lay an egg roll wrapper with one corner facing you (diamond shape).
    Place about 2 tbsp filling in the center. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly.
    Brush the top corner with beaten egg to seal.

  3. Fry:
    Heat oil to 350°F (175°C). Fry 2–3 rolls at a time for 3–4 minutes, turning, until golden brown.
    Drain on paper towels.

  4. Serve with:
    Sweet chili sauce, soy sauce, or spicy mustard.


🫓 Mediterranean Egg Rolls (Fusion Twist!)

Ingredients:

  • 1 tbsp olive oil

  • ½ lb ground lamb, beef, or crumbled falafel (for vegetarian)

  • ¼ cup finely chopped onion

  • ½ cup chopped spinach

  • ¼ cup crumbled feta

  • ¼ cup chopped sun-dried tomatoes or roasted red peppers

  • 1 tsp oregano

  • ½ tsp garlic powder

  • Salt & pepper

  • Egg roll wrappers + 1 beaten egg (for sealing)

Yogurt Dip:

  • ½ cup Greek yogurt

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • Salt, pepper, and chopped dill or mint


Directions:

  1. Cook filling:
    Sauté onion and meat (or falafel) in olive oil until browned. Add spinach, oregano, garlic powder, salt, and pepper. Cook until spinach wilts. Stir in feta and sun-dried tomatoes. Let cool.

  2. Assemble & roll:
    Place 2 tbsp filling in each wrapper, fold as before, and seal with egg.

  3. Cook:

    • Fry: 3–4 min at 350°F until golden.

    • Or bake: Brush lightly with olive oil and bake at 400°F (200°C) for 12–15 min until crisp.

  4. Serve:
    With the yogurt dipping sauce for a fresh, tangy finish!
