Ingredients (makes ~24 balls)

Peanut Butter Filling

  • 1 cup creamy peanut butter
  • ΒΌ cup unsalted butter, softened
  • 1Β½ cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt (optional, if PB isn’t salty)

Chocolate Coating

  • 2 cups chocolate chips (semi-sweet or dark)
  • 1 tbsp coconut oil or shortening (for smooth melting)

Instructions

  1. Make the Filling
    • In a bowl, mix peanut butter, butter, vanilla, and salt until smooth.
    • Gradually mix in powdered sugar until a soft, rollable dough forms.
  2. Roll
    • Scoop and roll into 1-inch balls.
    • Place on a parchment-lined baking sheet.
    • Freeze 20–30 minutes (important for clean dipping).
  3. Melt Chocolate
    • Microwave chocolate + coconut oil in 30-second bursts, stirring until smooth.
  4. Dip
    • Dip each ball into melted chocolate using a fork.
    • Let excess drip off and return to parchment.
  5. Set
    • Refrigerate 15–20 minutes until chocolate is firm.
  6. Enjoy
    • Store in fridge or cool room temperature.
