Classic American Pancakes
Ingredients
- 1½ cups all-purpose flour
- 3½ tsp baking powder
- 1 tbsp sugar
- ¼ tsp salt
- 1¼ cups milk
- 1 egg
- 3 tbsp melted butter (or oil)
- 1 tsp vanilla (optional but nice)
Directions
- Mix dry ingredients in a bowl.
- Whisk milk, egg, melted butter, and vanilla.
- Combine wet + dry just until mixed (lumps = fluffy pancakes).
- Heat lightly greased pan over medium heat.
- Pour ~¼ cup batter per pancake.
- Cook until bubbles form, flip, cook another 1–2 min.
- Stack. Admire. Eat.
Pro Tips
- Don’t overmix — that’s the #1 fluff killer.
- Let batter rest 5 minutes if you have time.
- Medium heat > high heat (burnt outside, raw inside is sad).
Variations
- Blueberry or chocolate chip: Fold in after mixing.
- Extra fluffy: Separate egg, whip white, fold in.
- Buttermilk style: Replace milk with buttermilk + reduce baking powder to 3 tsp.
- Banana pancake: Mash 1 ripe banana into the batter.
