🍫 Easy Chocolate Éclair Cake (No-Bake)

Ingredients

  • 1 box graham crackers
  • 2 small boxes (3.4 oz each) instant vanilla pudding
  • 3 cups cold milk
  • 1 tub (8 oz) whipped topping (Cool Whip), thawed
  • 1 can chocolate frosting or chocolate ganache

Instructions

  1. Make filling
    Whisk pudding mix with cold milk until thick.
    Fold in whipped topping until smooth.
  2. Layer it up
    • Line the bottom of a 9×13 dish with graham crackers
    • Spread half the pudding mixture
    • Add another graham cracker layer
    • Spread remaining pudding
    • Top with a final layer of graham crackers
  3. Chocolate topping
    Warm frosting slightly so it spreads easily, then spread over top
    (or pour ganache—see below)
  4. Chill
    Refrigerate at least 4 hours, overnight is best.
    The crackers soften into cake-like layers.

🍫 Quick Chocolate Ganache (upgrade option)

  • 1 cup chocolate chips
  • ½ cup heavy cream

Heat cream, pour over chips, let sit 2 minutes, stir smooth. Cool slightly, then pour on.

  • Slice with a sharp knife wiped clean between cuts
  • Tastes even better on day 2
