Ingredients

  • 1–2 lbs potatoes (Yukon Gold, red, or russet)
  • 2–3 tbsp olive oil
  • Salt & black pepper

Instructions

  1. Preheat oven to 425°F (220°C) — hot is key for crispiness.
  2. Prep potatoes: Wash and cut into even chunks (1–2 inches).
  3. Season: Toss potatoes with olive oil, salt, pepper, and any herbs/spices.
  4. Spread: Arrange on a baking sheet in a single layer — don’t overcrowd.
  5. Roast: Bake 25–35 minutes, flipping halfway, until golden brown and crispy.
  6. Finish: Sprinkle fresh herbs or a little Parmesan if desired. Serve hot.
