Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 3β4 cups diced potatoes (Yukon gold or russet)
- 3 cups chicken or beef broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 tsp salt
- Β½ tsp pepper
- 1 tsp paprika (optional)
- 2 cups shredded cheddar cheese
- 1 cup milk or half-and-half
- 2 tbsp cornstarch + 2 tbsp water (slurry)
Instructions
- Brown the beef in a skillet with onion and garlic. Drain grease.
- Add beef, potatoes, carrots, celery, broth, salt, pepper, and paprika to the crockpot.
- Cook on LOW 6β7 hours or HIGH 3β4 hours, until potatoes are tender.
- Stir in milk and cornstarch slurry. Cook 20β30 more minutes until thickened.
- Turn off heat and stir in cheddar until melted and smooth.
