Ingredients

For the cinnamon-sugar apple filling:

  • 2 tbsp granulated sugar

  • 1 tsp cinnamon

For the bread batter:

  • ½ cup (115 g) unsalted butter, softened

  • ¾ cup (150 g) granulated sugar

  • 2 large eggs

  • 1 ½ tsp vanilla extract

  • 1 ½ cups (190 g) all-purpose flour

  • 1 ¾ tsp baking powder

  • ½ cup (120 ml) milk

For the glaze:

  • ½ cup (60 g) powdered sugar

  • 1–2 tbsp milk or cream

  • ¼ tsp vanilla extract


Instructions

1. Preheat oven

  • Preheat to 350°F (175°C).

  • Grease and line a 9×5-inch loaf pan with parchment paper.


2. Prepare the apples

  • In a small bowl, toss chopped apples with sugar and cinnamon. Set aside.


3. Make the batter

  1. Cream butter and sugar together until light and fluffy (about 2 minutes).

  2. Add eggs one at a time, mixing well after each.

  3. Mix in vanilla.

  4. In a separate bowl, whisk flour and baking powder together.

  5. Add half of the dry ingredients to the butter mixture, then half of the milk.

  6. Repeat with the rest of the flour and milk, mixing until just combined (don’t overmix).


4. Assemble

  1. Pour half the batter into the loaf pan.

  2. Spoon half of the apple mixture over the batter and lightly press in.

  3. Add the rest of the batter, then top with remaining apples.

  4. Using a knife, gently swirl through the top layer a couple of times to create a marbled effect.


5. Bake

  • Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool in pan for 15 minutes, then transfer to a wire rack.


6. Glaze

  1. Whisk powdered sugar, milk, and vanilla until smooth.

  2. Drizzle over the warm bread.

  • Use tart apples (like Granny Smith) for the best balance of sweetness.

  • Add ½ cup chopped pecans or walnuts to the batter for extra texture.

  • Store covered at room temp for 2 days or refrigerate for up to 5.
