Ingredients

  • 2 large onions, thinly sliced

  • 2 large eggs
  • 3/4 cup milk

Instructions

  1. Prepare Onions:
    Peel and thinly slice the onions into rings. Separate the rings gently.
  2. Make the Batter:
    • In a medium bowl, whisk together flour, cornmeal, baking powder, salt, pepper, and paprika.
    • In another bowl, beat eggs and milk.
    • Gradually stir the dry ingredients into the wet mixture until smooth. The batter should be thick enough to coat the onions.
  3. Heat Oil:
    In a large skillet or deep fryer, heat vegetable oil over medium-high heat (about 350°F / 175°C). There should be enough oil to shallow fry, about 1/2–1 inch deep.
  4. Coat and Fry Onions:
    • Dip onion rings into the batter, letting excess drip off.
    • Carefully place them in the hot oil in batches. Fry until golden brown and crispy, about 2–3 minutes per side.
    • Transfer to a paper towel-lined plate to drain excess oil.
  5. Serve:
    Serve warm, plain or with ranch, ketchup, or apple sauce for a traditional Amish touch.

Tips for Extra Crispiness

  • Use cold milk for the batter—it helps create a lighter, crispier coating.
  • Fry in batches to avoid crowding; this keeps the oil temperature steady.
