Glazed meatloaf

Ahhh glazed meatloaf — classic, cozy, and straight-up comfort food 🍽️. Here’s a juicy, flavorful version with that sweet-tangy glaze everyone fights over.


Classic Glazed Meatloaf

Ingredients (serves 4–6)

Meatloaf

  • 1½ lbs ground beef (80/20 is best)
  • 1 cup breadcrumbs or crushed crackers
  • 1 cup milk
  • 2 large eggs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning (or parsley)

Glaze

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Lightly grease a loaf pan or line a baking sheet with foil.
  2. Make the meat mixture
    • In a large bowl, combine milk and breadcrumbs. Let soak 1–2 minutes.
    • Add eggs, onion, garlic, Worcestershire, salt, pepper, and seasoning.
    • Gently mix in ground beef until just combined (don’t overmix).
  3. Shape
    • Press mixture into loaf pan or shape into a loaf on the baking sheet.
  4. Make the glaze
    • Mix ketchup, brown sugar, mustard, and Worcestershire.
  5. Bake
    • Spread half the glaze over the meatloaf.
    • Bake 45 minutes.
  6. Final glaze
    • Remove from oven, spread remaining glaze on top.
    • Return to oven and bake another 15–20 minutes, until internal temp reaches 160°F (71°C).
  7. Rest & serve
    • Let rest 10 minutes before slicing.

🔥 Tips & Variations

  • Extra juicy: use half beef, half ground pork.
  • BBQ glaze swap: replace ketchup with BBQ sauce.
  • Add-ins: shredded cheese, diced bell pepper, or grated carrot.
  • Leftovers make AMAZING sandwiches.
