Slow Cooker Pepper Steak

Ooo yes — slow cooker pepper steak is cozy, savory, and perfect for hands-off comfort food 🫶. Tender beef, peppers, and a rich sauce that’s amazing over rice.


Slow Cooker Pepper Steak

Ingredients (serves 4–6)

  • 2 lbs beef sirloin, flank steak, or round steak, thinly sliced
  • 2 bell peppers (any color), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Sauce

  • ¾ cup beef broth
  • ½ cup soy sauce (low sodium recommended)
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground ginger (or fresh if you have it)
  • ½ teaspoon black pepper

To thicken

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Layer ingredients
    • Place sliced beef in the bottom of the slow cooker.
    • Add peppers, onion, and garlic on top.
  2. Make the sauce
    • In a bowl, whisk broth, soy sauce, brown sugar, Worcestershire, ginger, and black pepper.
    • Pour over everything.
  3. Cook
    • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
  4. Thicken sauce
    • Mix cornstarch and water.
    • Stir into slow cooker, cover, and cook another 15–20 minutes until thickened.
  5. Serve
    • Serve hot over steamed rice, noodles, or mashed potatoes.

🔥 Tips & Variations

  • For extra flavor, sear beef briefly before slow cooking (optional but tasty).
  • Add sliced mushrooms for more depth.
  • Want heat? Add crushed red pepper flakes or a splash of chili sauce.
  • If sauce is too salty, stir in a little water or broth at the end.
