Ingredients (for 2-3 servings):

  • 2 ripe avocados, diced

  • 1 cup cherry tomatoes, halved

  • ½ cucumber, diced

  • ¼ red onion, thinly sliced

  • 1 small handful of fresh cilantro or parsley, chopped

  • 1-2 tbsp olive oil

  • 1 tbsp lemon or lime juice

  • Salt and pepper, to taste

  • Optional: feta cheese, corn, or toasted nuts for extra flavor


Instructions:

  1. In a large bowl, combine the diced avocado, cherry tomatoes, cucumber, and red onion.

  2. Drizzle with olive oil and lemon/lime juice.

  3. Gently toss to mix, taking care not to mash the avocado.

  4. Season with salt and pepper to taste.

  5. Sprinkle fresh herbs on top. Add optional extras if desired.

  6. Serve immediately, or chill for 10–15 minutes for a refreshing cool salad.

  • Use slightly firm avocados so they hold their shape.
