Heck yes 😮‍🔥 beef quesadillas are quick, cheesy, and endlessly customizable. Here’s a bold, juicy, crispy version that never fails.


🌮🧀 Beef Quesadillas

Ingredients

  • 1 lb ground beef or thin-sliced steak
  • 1 tbsp oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt & black pepper
  • ½ cup onion, diced
  • ½ cup bell pepper, diced (optional)
  • 2 cups shredded cheese
    (Mexican blend, cheddar, Monterey Jack, or Oaxaca)
  • Large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the beef
    • Heat oil in a skillet over medium-high.
    • Brown beef with onion and bell pepper.
    • Season with chili powder, cumin, paprika, garlic powder, salt, and pepper.
    • Drain excess grease.
  2. Assemble
    • Heat a clean skillet over medium.
    • Lightly butter one side of a tortilla.
    • Place tortilla butter-side down.
    • Add cheese → beef → more cheese.
    • Top with another tortilla.
  3. Crisp
    • Cook 2–3 minutes per side until golden and cheese is melted.
    • Press lightly with a spatula.
  4. Slice & serve
    • Rest 1 minute, then cut into wedges.
