Mushroom Onion Gravy

Oh yes—mushroom onion gravy is pure comfort, deep and savory. Perfect over steak, mashed potatoes, meatloaf, or biscuits. 🍄🧅🤎


Mushroom Onion Gravy (Rich & Classic)

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 225 g (8 oz) mushrooms, sliced (cremini or button)
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth (or vegetable broth)
  • 1 tsp Worcestershire sauce
  • Salt & black pepper
  • Optional: thyme, soy sauce, splash of cream

Method

  1. Caramelize onions
    • Heat butter + oil over medium heat.
    • Add onions with a pinch of salt.
    • Cook 10–15 minutes, stirring occasionally, until soft and golden.
  2. Cook mushrooms
    • Add mushrooms and cook 5–7 minutes until browned and moisture evaporates.
  3. Garlic + flour
    • Stir in garlic, cook 30 seconds.
    • Sprinkle flour over everything; cook 1–2 minutes to remove raw taste.
  4. Build gravy
    • Slowly whisk in broth.
    • Add Worcestershire, pepper, and thyme if using.
    • Simmer 5–8 minutes until thick.
  5. Finish
    • Adjust salt.
    • Optional: add splash of cream or soy sauce for richness.

Pro tips

  • Don’t rush the onions—that’s where the flavor lives.
  • If gravy gets too thick, loosen with broth.
  • For ultra-smooth gravy, blend half and mix back in.

Variations

  • Vegetarian: veg broth + extra mushrooms
  • Steakhouse style: beef drippings instead of butter
  • French onion vibe: add splash of sherry or balsamic
  • Extra umami: miso or soy sauce (½ tsp)
