Barbecue Chicken

Ingredients:

  • 4 bone-in, skin-on chicken breasts, thighs, or drumsticks (your choice!)

  • 1 tsp garlic powder

Instructions:

  1. Prepare the Chicken:

    • Preheat your oven to 375°F (190°C) if you’re baking, or preheat your grill to medium heat (about 350°F/175°C).

    • Pat the chicken dry with paper towels to remove excess moisture. This helps achieve a crispier skin.

    • Rub the chicken pieces with olive oil to coat them evenly.

    • Season the chicken with garlic powder, onion powder, paprika, salt, and pepper. Make sure to coat all sides.

  2. Grill or Bake the Chicken:

    If Baking:

    • Place the seasoned chicken on a baking sheet lined with parchment paper or foil.

    • Bake in the preheated oven for 25–30 minutes (for thighs and drumsticks) or 20–25 minutes (for breasts), until the chicken is cooked through (internal temperature should reach 165°F/74°C).

    • For crispy skin, you can broil the chicken for the last 5 minutes of baking, but keep an eye on it to avoid burning.

    If Grilling:

    • Place the chicken on the grill, skin side down, and cook for 5–7 minutes on each side, turning occasionally to ensure it cooks evenly.

    • Reduce the heat to low and continue grilling for another 15–20 minutes, turning and basting with barbecue sauce every 5–7 minutes. This allows the sauce to caramelize and infuse the chicken with that rich, smoky flavor.

  3. Brush with Barbecue Sauce:

    • During the last 5 minutes of cooking (whether baking or grilling), brush the chicken with your favorite barbecue sauce. Make sure to coat it evenly, then allow it to caramelize a bit. You can brush on more sauce before serving for an extra punch of flavor.

  4. Serve:

    • Once the chicken is cooked and the sauce is beautifully glazed, remove it from the grill or oven.

    • Garnish with fresh parsley or cilantro if you like, and serve immediately.


Homemade Barbecue Sauce (optional):

Ingredients for BBQ Sauce:

  • 1 cup ketchup

  • 1/4 cup apple cider vinegar

  • 1/4 cup brown sugar (or honey for a sweeter touch)

  • 1 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp smoked paprika (or regular paprika)

  • 1/4 tsp black pepper

  • 1/4 tsp salt

  • 1/4 tsp cayenne pepper (optional, for a spicy kick)

Instructions:

  1. Combine all ingredients in a saucepan over medium heat.

  2. Stir until the sugar is dissolved and the sauce begins to simmer.

  3. Reduce the heat to low and let it simmer for about 15 minutes, stirring occasionally.

  4. Adjust seasoning to taste—add more sugar for sweetness or more cayenne for heat.


Pro Tips:

  • Avoid burning the sauce: Barbecue sauce contains sugar, which can burn quickly. Apply the sauce towards the end of cooking, so it has time to caramelize without burning.

  • Make it smoky: For a smoky twist, try adding a bit of liquid smoke to the barbecue sauce or sprinkle a little smoked paprika on the chicken before grilling or baking.

  • Rest the chicken: After cooking, let the chicken rest for about 5 minutes before serving to lock in juices.
