Creamy Cucumber Salad

Ingredients:

  • 3 large cucumbers, peeled and thinly sliced (or you can leave the skin on for extra texture)

  • 1 small red onion, thinly sliced (optional, but adds great flavor)

  • 1 cup sour cream (or Greek yogurt for a lighter version)

  • 1/4 cup mayonnaise

  • 1 tbsp white vinegar (or lemon juice for a citrusy twist)

  • 1 tbsp sugar (adjust to taste)

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp dried dill (or fresh dill if you have it)

  • Salt and pepper to taste

  • Fresh dill for garnish (optional)


Instructions:

  1. Prepare the Cucumbers:

    • Peel the cucumbers if you prefer, or leave the skin on for a little extra crunch. Slice them thinly using a mandolin or a sharp knife.

    • Place the cucumber slices in a large bowl. If you want to reduce some of the water from the cucumbers, sprinkle them with a little salt and let them sit for about 15 minutes. Afterward, gently pat them dry with paper towels to remove excess moisture.

  2. Make the Creamy Dressing:

    • In a separate bowl, whisk together the sour cream, mayonnaise, vinegar (or lemon juice), sugar, garlic powder, onion powder, and dried dill.

    • Taste the dressing and adjust the seasoning with salt and pepper to your liking. If you prefer a bit more tang, you can add a little more vinegar or lemon juice.

  3. Toss the Salad:

    • Add the thinly sliced onions (if using) to the cucumber slices. Pour the creamy dressing over the cucumbers and toss everything together until the cucumbers are well coated.

  4. Chill:

    • For the best flavor, cover the salad and let it chill in the fridge for at least 30 minutes. This allows the flavors to meld together and enhances the taste.

  5. Serve:

    • Garnish with a little fresh dill on top before serving for a pop of color and extra flavor.

  • Crispness: If you want the cucumbers extra crispy, follow the step of salting them and letting them sit. This will help remove excess water, keeping your salad from becoming too watery.
