Chicken Foil Packets

Chicken foil packets are a great, easy, and healthy way to cook chicken while keeping it juicy and flavorful! You can customize them with your favorite vegetables, seasonings, and even different types of sauces. Perfect for grilling, baking, or even cooking over a campfire! Here’s a simple chicken foil packet recipe you can try:


Simple Chicken Foil Packets

Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs if you prefer darker meat)

  • 2 tbsp olive oil (or melted butter)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme (or Italian seasoning)

  • Salt and pepper, to taste

  • 1 lemon, sliced

  • 1 cup baby potatoes, halved (or diced regular potatoes)

  • 1 cup baby carrots (or diced regular carrots)

  • 1 cup zucchini, sliced (optional)

  • Fresh herbs like parsley or rosemary for garnish (optional)


Instructions:

  1. Preheat Oven or Grill:

    • If baking, preheat your oven to 400°F (200°C).

    • If grilling, preheat your grill to medium-high heat (about 375°F to 400°F).

  2. Prepare the Veggies:

    • Wash and chop your veggies into bite-sized pieces. For potatoes, make sure they’re cut small enough to cook through. If you’re using zucchini, slice them into rounds.

    • Toss the potatoes, carrots, and zucchini (if using) in a little olive oil, salt, and pepper. You can also add a pinch of garlic powder or your favorite seasoning mix here.

  3. Season the Chicken:

    • Drizzle the chicken breasts (or thighs) with olive oil or melted butter, then sprinkle with garlic powder, onion powder, thyme, salt, and pepper. Rub the seasonings in so the chicken is well-coated.

  4. Assemble the Foil Packets:

    • Tear off 4 large sheets of aluminum foil (about 12 inches each).

    • On each piece of foil, place a portion of the seasoned chicken, followed by a handful of the seasoned veggies.

    • Place a few lemon slices on top of the chicken for added flavor.

    • Fold the sides of the foil up and over the ingredients to create a sealed packet. Make sure it’s tightly closed so the steam stays inside while cooking.

  5. Cook:

    • For the oven: Place the foil packets on a baking sheet and bake in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the veggies are tender.

    • For the grill: Place the foil packets on the grill, close the lid, and cook for about 20–25 minutes, flipping once halfway through. Make sure the chicken is fully cooked and the veggies are tender.

  6. Serve:

    • Once cooked, carefully open the foil packets (watch out for steam!), and serve the chicken and veggies straight from the packet, or transfer to plates.

    • Garnish with fresh parsley or rosemary if desired, and a squeeze of fresh lemon juice.


Variations & Add-ins:

  • Cheese: Add some shredded cheese (like mozzarella or cheddar) on top of the chicken during the last few minutes of cooking for a melty, cheesy finish.

  • Potatoes: You can also par-cook the potatoes (microwave them for a few minutes) before adding them to the packet if you want them to cook faster.

  • Spices & Sauces: Feel free to play around with different spice blends like taco seasoning, Cajun seasoning, or barbecue sauce for a different flavor profile.

  • Veggies: Swap in other veggies like bell peppers, asparagus, broccoli, or sweet potatoes depending on what you have available.


💡 Pro Tip: If you’re using potatoes, make sure they’re thinly sliced or pre-cooked slightly. Otherwise, they may not cook all the way through by the time the chicken is done.
