Chocolate-Covered Peanut Butter Ritz Cracker Treats

Ingredients (Makes ~24 treats)

  • 48 Ritz crackers
  • 1 cup creamy peanut butter
  • 2 cups chocolate chips (milk, semi-sweet, or dark)
  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate)
  • Optional toppings: sea salt, sprinkles, chopped peanuts, drizzle of white chocolate

Instructions

  1. Make Cracker Sandwiches
    • Spread about 1 teaspoon peanut butter on one Ritz cracker.
    • Top with another cracker to make a sandwich.
    • Repeat with remaining crackers.
  2. Melt Chocolate
    • In a microwave-safe bowl, melt chocolate chips (and coconut oil if using) in 30-second intervals, stirring until smooth.
  3. Dip
    • Dip each cracker sandwich into melted chocolate, coating completely.
    • Use a fork to lift out, tap off excess chocolate.
  4. Set
    • Place on a parchment-lined baking sheet.
    • Sprinkle toppings if desired before chocolate sets.
  5. Chill
    • Refrigerate 20–30 minutes until firm.
