Chocolate Coconut Bars (No-Bake Option Included)

Ingredients

  • 2 cups sweetened shredded coconut
  • 1 cup chocolate chips (milk, dark, or semi-sweet)
  • ½ cup sweetened condensed milk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions (No-Bake – Easiest)

  1. Mix Coconut Base
    • In a bowl, combine coconut, condensed milk, vanilla, and salt.
    • Mix until fully coated.
  2. Form Bars or Balls
    • Press mixture into a parchment-lined pan or
    • Roll into small balls and place on a tray.
  3. Melt Chocolate
    • Melt chocolate chips in microwave (30-sec intervals) or stovetop.
  4. Coat
    • Drizzle or dip coconut bars/balls in melted chocolate.
  5. Set
    • Refrigerate 30 minutes until firm.

Baked Version (More Toasted Flavor)

  • Bake coconut mixture at 350°F (175°C) for 15–18 minutes until lightly golden
  • Cool, then add chocolate topping

  • Almond Joy–style: Add whole almonds before coating
  • Keto/low sugar: Use unsweetened coconut + sugar-free chocolate
